100%
This contains no sugar or sweetener of any sort. It is pure
chocolate. Because we spend lots of time grinding and aging our
chocolate, it is mellower and less bitter than most other 100%
chocolates.
That said, it is still pure chocolate with NO sweetener.
This is not my first choice, but the chocolate flavor lingers in my
mouth and I enjoy it. Some sugar avoiders purchase the 100%
cacao, melt it down and add their own sweeteners like xylitol,
stevia, or monk fruit to it. Just beware if you do this, you have
taken the chocolate out of temper and it will start looking strange if
you don’t use it quickly. The chocolate is still fine to eat, but will
not look beautiful.

90%
This is a slightly sweetened chocolate. With 90% chocolate
and 10% cane sugar, it has a deep dark chocolate tanginess. If you
are going low carb or just really like dark chocolate give this a try.
If you are a sweet tooth person, go for a lesser concentration.

75%
This is our middle of the road chocolate. Dark enough for
the dark chocolate lovers and sweet enough for the sweetened
chocolate lovers. Most people are amazed at how mellow our 75%
chocolate is compared to other chocolates of the same percentage.
This is due to the way we process it, but also because we use Costa
Rican beans. Costa Rican beans are rated in the top 5% in the world
for flavor and aroma. The true quality of the beans really comes
through in this blend. If you are a true dark chocolate lover get
this. You will love the richness of the flavor.

60%
This is our sweetest blend. With 60% chocolate and 40%
cane sugar it hits the spot for sweet chocolate lovers. Even
customers that have said they only eat milk chocolate enjoy our
60%. I used to be a milk chocolate only person. Now, I am a dark
chocolate convert. Again the quality of pure whole bean chocolate
just can’t be beat for true chocolate taste.
